Fatty Acid Classification Saturated fatty acids (Do not contain double bonds), saturated Fatty Acid (SFA) Saturated fatty acids do not have double bonds in their structure125. Single bonds of carbon atoms (C), where each C atom will bond with an H atom, examples are: butyric acid (C4), caproic acid (C6), caprotic acid (C8) and capric acid (C10). (C10). Generally, capric acid (C10) is liquid and starts with lauric acid until the lignoceric acid is solid. Lauric acid The main source of this fatty acid is coconut oil, which can contain 50% lauric acid, as well palm kernel oil . Another source is cow's milk. Empirical formula : (CHO) n Chemical properties : This acid is soluble in polar solvents like water and also soluble in fat because of the hydrocarbon (methyl) group at one end and the carboxyl group at the other end. Physical properties : Lauric acid will melting at point of 44 °C and a boiling at point of 225 °C so that at At room temperature it is a white solid and melts easily when heated. Palmitic acid The chemical nature of palmitic acid is that it is a fatty acid that cannot dissolve in water Plants from Palmaceae family, such as coconut (Cocos nucifera) and oil palm (Elaeis guineensis) is the main source of this fatty acid. Coconut oil even contains almost all palmitate (92%). Palm oil contains about 50% palmitate. Animal products It also contains lots of these fatty acids (from butter, cheese, milk and also meat). Empirical formula: (CHO)n Molecular formula: C16H32O2 Chemical properties : Palmitic acid is insoluble in water. It is the initial product in the fatty acid biosynthesis process (see fatty acids article). From palmitic acid, bond elongation or doubling takes place further. From a nutritional perspective, palmitic acid is an important source of calories but has low antioxidant power. Physical properties : Palmitic acid at room temperature is a solid crystal. Stearic acid Stearic acid is a saturated fatty acid that is easily obtained from animal fats and cooking oils. The solubility of fatty acids in water decreases with increasing length carbon chain . It is a solid at room temperature, with the chemical formula CH3(CH2)16COOH. The word stearate comes from Greek stear, which means "solid fat" (Ing. tallow). Stearic acid is processed by treating animal fat with water at high temperature and pressure. Unsaturated Fatty Acids (contain double bonds) Monounsaturated fatty acids are fatty acids that always contain 1 double bond129 , 2 C atoms with the loss of at least 2 H atoms. For example, burric acid, palmitoleic acid (C12), and oleic acid (C18) are generally found in many vegetable or animal fats. and in liquid form . Poly Unsaturated Fatty Acids (PUFA, Poly Unsaturated Fatty Acid) Unsaturated fatty acids with many double bonds are fatty acids that contain more than 1 double bond. This fatty acid will lose at least 4 H atoms, for example acid linoleic fat. The chemical nature of linoleic acid is that it is insoluble in water
