Underlying Principles There are 3 types of fats: -saturated: solid at room temp and found primarily in animal sources. -Unsaturated: include mono and polyunsaturated fats, found in plant sources; monounsaturated: olives, canola oil, avocado, peanuts, and other nuts. Polyunsaturated: corn, wheat germ, soybean, sunflower, and fish. -essential fatty acids: made from broken down fats; include omega 3 and 6; support blood clotting, BP, inflammatory responses, etc Nursing Interventions Assess the patient in regards to what they know about fats, in relation to cardiac diseases/diabetes, and which foods contain saturated fats. Educate the patient about the importance of reducing saturated fats and which kinds of foods contain saturated fats.
