Digestion of Carbohydrates Digestion of carbohydrates begins in the mouth. Salivary amylase: Breaks down starch into maltose and dextrin. Digestion of complex carbohydrates begins in the mouth. The food bolus is swallowed and enters the stomach. Digestion in the Stomach: Salivary amylase continues to act on starch for some time. When the food bolus mixes with gastric juice, the action of amylase stops. Digestion in the Small Intestine Pancreatic amylase continues the digestion of starch to maltose. The final digestion of carbohydrates is completed in the small intestine. The final digestive products of carbohydrates are monosaccharides such as glucose, fructose, and galactose, which are absorbed in the small intestine. Enzymes: Pancreatic enzymes also digest fats and proteins. Intestinal enzymes complete the digestion of fats, proteins, and carbohydrates. Disaccharidases: These enzymes break down disaccharides (e.g., maltose, sucrose, lactose) into monosaccharides. Maltase: Breaks down maltose into glucose. Sucrase: Breaks down sucrose into glucose and fructose. Lactase: Breaks down lactose into glucose and galactose.
