β-sheet (β-pleated sheet) It is an extended structure whose bonding polypeptides are arranged in the form of sheets. It is stabilized by hydrogen bonds formed b/w the C=O and NH of peptide bonds of adjacent segments of same polypeptide chain. Hydrogen bonds are perpendicular to the polypeptide bonds. Depending on direction of bonding chain, structure of β-sheet may be parallel/ anti-parallel. Parallel: If the bonding chain runs in the same direction. Ex: Flavodoxin Anti-parallel: If the bonding chain runs in the opposite direction. Ex: Fibroin of silk. Carbonic Anhydrase: Carbonic anhydrase shows both parallel and anti-parallel β-sheet. Parallel: N-C || O=C H Anti-parallel: N-C || O=C H Tertiary Structure: Tertiary structure of protein refers to the further folding of secondary structure of polypeptide chain giving the compact 3-dimensional conformation.
