EXPERIMENT III HYDROLYSIS OF BUTTER Lipids are a class of compounds in living organisms that are soluble in organic solvents. Lipids serve an important function in the body as several solvents vitamins (A, D, E, and K) and is also a more effective source of energy than carbohydrates and proteins. Fats and oils are simple lipids. Fat is in solid for room temperature, while the oil is liquid. Fats and oils are triglycerides namely esters formed by the condensation of three fatty acid molecules with trihydroxy alcohol (glycerol). The three constituent fatty acid molecules in this case are not all must be the same, three fatty acids that are different from each other can be condenses with one glycerol molecule. The most important fatty acid present in plants. 1. Butter Hydrolysis Reactor : - 20% NaOH - 40% ethanol - 0.1 N CaCl2(dissolve 22.2 gr CaCl2in 100 ml of water) - 2 NHs2SO4(dissolve 36 ml H2SO4diluted with water to 1 liter) Procedure : 1. Put 5 grams of butter into a small beakerglass then add 35 ml NaOH alcoholic (20 NaOH in 40 % ethanol), cover with a watch glass and heat over boiling water until complete lathering. Soaping perfection can be tested by taking a few drops of soaping results, then put it in a test tube filled with water. When soaping is complete A clear solution will be obtained without oil drops on the surface. 2. After complete soaping, add 10 mL of water and transfer it inside 250 ml beaker glass. Heat over a boiling water bath until all the alcohol evaporates (no smell of alcohol). 3. Take 1 mL of soap solution in stage 2, put it in a test tube, Shake and watch for foam formation. Then add 1 mL of water and 0.5 mL CaCl20.1 N. Pay attention to whether sediment occurs? Explain ! 4. Take 1 mL of soap solution in stage 2, put it in a test tube, then Add 1 mL of water and solid NaCl until saturated. What happened and explain this event! 5. Take 5 mL of soap solution in step 2, add 2 N Sulfuric Acid (check with litmus) until acidic. Note the formation of butyric acid odor and other volatile fatty acids. Write down the reactions in this experiment. The fat layer on the surface is transferred with a pipette into a tube reaction, heat until the acid disappears, then cool. Check with a test Acrolein. 2. Acrolein Test Glycerol is dehydrated with KHSO4anhydrous forms an aldehyde The saturation is acrolein. Acrolein has a distinctive unpleasant odor. Procedure : 1. Provide 3 clean and dry test tubes, then put them into each tube insert 10 drops"olive oil ” (olive oil), glycerol, and a little acid palmitate. 2. Into each tube, add a certain volume with KHSO4, then heated slowly directly over the fire. Pay attention to smells nose-piercing acrolein. (Do not confuse the smell of acrolein with SO smells2).
